Cinnamon rolls recipe

I made some delicious cinnamon rolls over the weekend that I wanted to share with you! The original recipe is here and I used the one without yeast.

Here's what you'll need for the dough:

2 1/2 c flour, plus extra for the counter
2 T white granulated sugar
1 1/4 t baking powder
1/2 t baking soda
1/2 t salt
1 1/4 c buttermilk
6 T unsalted butter, melted

For the cinnamon filling:

3/4 c packed dark brown sugar
1/4 c white granulated sugar
3 t cinnamon
1/8 t salt
1 T unsalted butter, melted

Pre-heat your oven to 425 degrees F. Coat a 9 inch, round pan with cooking spray.

Make your cinnamon filling by mixing the brown sugar, white sugar, cinnamon, salt and butter together until the mixture resembles wet sand.

Make your dough by mixing the flour, sugar, baking soda, baking powder and salt.

In a separate bowl, mix the buttermilk with 2 T of the melted butter, then add the buttermilk mixture to your flour mixture.  

Stir for about 30 seconds. The dough will look shaggy.

Turn the dough out onto your floured countertop and knead until smooth, about 1 minute.

Press the dough into a 9x12 inch rectangle using your hands. 

Brush the surface of your dough with 2 T of melted butter and sprinkle the cinnamon mixture on top. Press it into the dough, leaving a 1/2 inch border around the edges. 

Loosen your dough from the counter using a spatula if necessary. Starting at the long end, begin rolling your dough into a log. 

Pinch the edges to seal and cut your roll into 8 even pieces. 

Place your sliced rolls into the greased pan and brush the tops with the remaining 2 T of melted butter.

Bake until golden brown, about 20-25 minutes. 

While your rolls are baking, mix up your icing. You'll need:

8 oz cream cheese
1/2 cup butter
1 teaspoon vanilla
3 cups confectioner's sugar
1 Tablespoon milk

Just stir all of the ingredients together until smooth.

Top your delicious cinnamon rolls with icing and enjoy!

    Yumm!! They both sound so good! I haven't had zucchini bread in a long time!

  3. I tried to make the cinnamon rolls this weekend! They tasted amazing, but mine were a tad crumbly when I took them out of the pan.

    Nice! Did you leave them in the pan until they cool a little? That might help with the crumbling!
