Easy recipe: Beef skillet

I rarely get a chance to cook these days, and even when I do, it has to be something super easy and as nutritious as possible. It also has to be dairy-free. We figured out that Audrey is sensitive to dairy in my milk, so I started eliminating that from my diet back in December.

Anyway...this is a recipe that meets all of my criteria and is pretty tasty, too! I found the original recipe here. I didn't have all of the ingredients it called for, so I just adjusted, using what I had on-hand and came up with my own take on it.

Here's what I used:

1lb. organic ground beef
4 carrots, chopped
3 celery stalks, chopped
2 beef bullion cubes
1c water
3 tablespoons soy sauce
1 package of Wegman's fresh linguine

Start cooking the beef, carrots and celery in your pan. In the meantime, start boiling your pasta water in a separate pot. As you finish cooking the beef and veggies, dissolve 2 beef bullion cubes in 1 cup of water and add to pan; also add soy sauce to pan. Cover and simmer until most of the water is absorbed. By this point, your pot of water is ready for the pasta to be tossed in. Cook until done, combine with beef and veggies and enjoy!

  1. That looks so delicous yet simple, I will have to try it out! Especially because it is dairy free, Parker would like that! I am sorry that Audrey seems to having trouble with dairy, it was certainly a hard thing to give up but definitely worth it! You are a great mom. :)

  3. This sounds really yummy, and easy, so I'm all about that! I'm curious, how did you figure out it was dairy that Audrey was sensitive to? My daughter is 5 weeks and has been having some tummy troubles after and sometimes during nursing, and we're wondering if it's something I'm eating or if it might be some kind of reflux issue. My son didn't have any issues so this is really frustrating! I agree though, whatever I may have to do it's so worth it. I LOVE nursing my babies!!

  4. Hi Stephanie! So sorry to hear your daughter is having tummy issues. It's so tough when they're so little and you don't know what's wrong:( At first, the Dr. diagnosed Audrey with reflux and gave us a prescription for Prevacid. We gave it some time, but it didn't work, so they suggested eliminating dairy from my diet. It took a while, but after about a month being off dairy, I noticed that Audrey seemed much more comfortable and happy. You really just have to try eliminating it from your diet to see if it's the problem. It takes about 2 weeks to leave your system and about 4 to leave baby's. I was off it for almost a year and it was more than worth it. Hope that helps! Good luck to you and baby:)
