The best chocolate chip cookies!
Before I share the recipe, a little backstory for you....
I made these cookies for the first time last summer. It took me an hour to cream the butter and sugar with my hand mixer! But, they tasted so good, and Josh was instantly obsessed with them. I told him I wouldn't be making them again unless I got a Kitchen Aid stand mixer. So guess what? He told me to go buy one! That's how amazing these cookies are!
I knew they'd be a hit at Rebekah's shower too, so I was really excited to make them for that.
If you're on Pinterest, you might know these as the NY Times Chocolate Chip cookies. I found the original recipe here and I modified it just slightly.
2 cups minus 2 tablespoons cake flour
1 2/3 cups bread flour
1 1/4 teaspoons baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons coarse salt (I used Kosher)
2 1/2 sticks unsalted butter
1 1/4 cups light brown sugar
1 cup plus 2 tablespoons granulated sugar
2 large eggs
2 teaspoons vanilla
8 oz semi-sweet chocolate chunks
2 oz unsweetened chocolate, grated
8 oz semi-sweet chocolate chips
Sift flours, baking soda, baking powder and coarse salt into a bowl. Set aside.
Cream butter and sugars together until very light, about 5 minutes. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
Reduce speed to low and add dry ingredients. Mix until just combined.
Stir chocolate into dough using a wooden spoon (and lots of elbow grease!)
Press plastic wrap against dough and refrigerate for at least 24 hours. You can refrigerate for as long as 72 hours.
I used a tablespoon to drop my cookies onto the baking sheet and rolled them into balls, just to make for more of a round cookie, but you don't have to do that step. Once they're on the cookie sheet, sprinkle them lightly with sea salt. Bake in a 350 degree oven for 10-12 minutes, until light golden brown.
I got exactly 54 cookies from this recipe! Josh ate about 7 of those, so only about 47 actually made it to the shower!
