As you all probably know, I'm a big fan of crock pot cooking. I hadn't found many crock pot freezer meals that I liked...until I found this blog via Pinterest! I was so inspired by her post on freezer meals for your crockpot! I love the idea of prepping several meals at once and freezing them for later. It cuts down on so much food prep time and helps to avoid those "there's nothing for dinner" moments!
It's much easier for me to take a few hours on a weekend to prep meals while Josh is home and can watch Audrey, instead of me doing all the prep work and cooking each weeknight while I'm on my own with her. I think these freezer meals are definitely something I'll be making more often!
I tried the Teriyaki Chicken recipe from the blog linked above and made a few minor adjustments:
Freezer to Crockpot Teriyaki Chicken
2 boneless, skinless chicken breasts
6 carrots, chopped
1/2 green pepper, diced
1/4 teaspoon garlic powder (or 1 clove)
3/4 cup teriyaki sauce
1/2 can pineapple chunks with juice
First, label a gallon freezer bag with the recipe name, the date and the following instructions:
Add 1/4 cup teriyaki sauce to crockpot. Cook on low 8 hours. Cook on high 4 hours. Serve over rice.
Then, just toss all of your ingredients into the bag, seal, shake, and freeze!
The original recipe recommends unthawing the meal before putting it into the crock pot. I've also put it in the crockpot frozen, and it turns out just the same, you just have allow for some extra cooking time!
This recipe is enough for 2 people and maybe some leftovers.
