Apple Cider Baked Chicken

I love a good fall recipe. This one combines some of my favorite fall staples: apples, apple cider, potatoes. Yum! I've made it a few times now and I've done it just a little differently each time-once with chicken breast on the bone, once with boneless skinless chicken breasts...either way, it's delicious.

(original recipe here - I made slight changes)

1 onion, sliced into eighths 
1 lemon, sliced into thin rounds
2 cups apple cider
1/4 cup olive oil
2 teaspoons dried thyme
2 tablespoons apple cider vinegar
2 teaspoons dijon mustard
2 garlic cloves, minced
2 bay leaves
1/2 teaspoon salt
1/2 teaspoon pepper
2-4 chicken breasts (I usually just do 2 for our family)
2 large apples sliced into eighths
1 pound small potatoes, cut in half (I used red)

Place all ingredients except for the apples and potatoes into a gallon sized Ziploc bag. Gently shake the bag until the marinade is combined. Refrigerate for 4-24 hours. 

Preheat oven to 350 degrees. Remove chicken from marinade bag. For boneless breasts, I like to sear them for about 4-5 minutes on each side, just to give them a nice golden brown color before putting them in the oven, but you don't have to do this step. Place the seared (or non-seared) chicken in a large baking dish or pan. Pour the marinade over the chicken. Add in apples and potatoes and arrange around the chicken. Cook 1 hour (for boneless/skinless breasts).
